In a bowl, whisk the butter and brown sugar with a hand whisk until properly creamed together, about 3-5 minutes
40 grams unsalted butter, room temperature, 40 gs brown sugar
Add the honey and whisk again until combined, then add the sea salt and give it a final mix.
20 grams honey, 1/2 tsp sea salt
Prepare the bread slices: slice the edges off each bread and create a pocked in the center on the bottom side of the slice by cutting it horizontally. Don't cut it all the way through, only create a pocket.
2 slices thick brioche bread
Transfer the condensed milk in a piping or ziplock bag and fill it inside the bread pocket.
100 grams condensed milk
Spread the honey butter on the filled bread, making sure to cover all sides of the slice.
Pre-heat your pan, place the bread slices on it and let them cook for 2-3 minutes on each side on medium heat, until golden brown. Make sure to cook the edges as well.
Top with more condensed milk and strawberries and enjoy fresh.
