Place a saucepan on medium heat and pour the coca-cola (450 ml) into it. Bring the coca-cola to a boil and let it simmer on medium heat for 20-30 minutes, until it has reduced into a slightly thick syrup.
Once the coca-cola has been reduced, add the liquid whipping cream (80 ml) and whisk until it's well combined, then let it simmer again for 5-8 minutes until it reaches a thick consistency.
Take the caramel off the heat and add the cold butter (15 gs) and whisk until it's melted and well combined.
Let the caramel chill for 30 minutes to 1 hour, until it reaches a thick, caramel like consistency.

Variation:You can replace the coca-cola with any soda of your choice to change the flavor of your caramel. Anything except for diet soda will work.Storage:The caramel can be stored for up to a week in an air-tight container in the refrigerator.
