If you’ve been dreaming about tasting those delicious cookies or (“as ya’ll call ’em here, biscuits”) that Ted Lasso bought for Rebecca every morning for the “Biscuits With The Boss” session, you’re in luck cause I’ve got the copycat recipe for you!

Granted, none of us have ever tasted those cookies, but they have been described in the show time and time again and have been famously known to be simple yet wonderful and buttery shortbread cookies. While shortbread biscuits are nothing new, Ted Lasso gave them a new meaning.

I mean, come on, who wouldn’t love a “biscuits with the boss” session every morning with those delicacies?

Ted Lasso is one of my favorite shows; so wholesome and pure. It’s a show I find myself going back to time and time again whenever I need a little bit of comfort. It always does the job so well. So with the new season coming up, I knew I HAD to make my own version of the “Biscuits With The Boss,” and can I say, these turned out better than MOST shortbread biscuits I’ve had from stores.

I’m not kidding; they’re just so delicious you won’t be able to stop eating them; I’m literally munching on one while writing this. They’re smooth from the butter, sweet from the icing sugar, slightly salty from the salt and crisp from the flour. It’s a perfect balance. And yes, those are the only four ingredients you need to make these cookies.

How To Make The Ted Lasso “Biscuits With The Boss”

The method to make these biscuits really could not be easier. Even if you have never baked before, you will be able to nail this recipe. Here’s how to make them.

  • Whip the butter on high speed for 3-4 minutes until it’s pale and creamy.
  • With your mixer on, gradually add the icing sugar and mix until fully combined.
  • Sift the flour into the batter and mix until fully combined.
  • Transfer the dough to a baking sheet, form a 1/2 inch square or rectangle, and chill in the fridge for 30 mins.
  • Make cuts in the biscuit bar before baking, bake them, cut them again, and let them cool before serving.

That’s literally it. Plus, you can easily make the dough ahead of time if you want to bake fresh cookies. They also stay fresh for a long time!

There are only two things that can go wrong while making these biscuits.

  • Overmixing: When adding the flour, make sure to mix until just combined. If you overmix the dough, there will be an increased amount of gluten formation, leading to tough biscuits.
  • Chilling: Chilling the dough before baking is necessary because the dough is very soft initially and hardens when refrigerated. The chilled dough bakes much better and gives the biscuits a crumbly texture.

Pro Tip: This biscuit is all about butter, so make sure you’re using high-quality butter while making these. I have used Kerrygold Unsalted Butter.

PS: I always measure ingredients in grams, never in cups. Using a measuring scale is the only way to bake accurately. Cups are unreliable and can give different measurements, so I suggest you buy a measuring scale before you start baking! If you can’t get your hands on one, you can use the online tools for converting grams into cups; however, I do not guarantee their accuracy.

Ted Lasso Biscuits With The Boss Recipe

These sweet, crisp, and crumbly shortbread cookies inspired by Ted Lasso are the perfect accompaniment for your tea and coffee. Made with only 4 ingredients!
Servings 10 biscuits
Prep Time 30 minutes
Cook Time 1 hour
Chilling Time 30 minutes
Total Time 2 hours

Equipment

  • 7×9 inch pan (you can use any rectangle pan and cut the biscuits accordingly)
  • Electric or stand mixer
  • Sifter

Ingredients
  

  • 225 gs unsalted butter, softened
  • 1/2 tsp vanilla essence (optional)
  • 90 gs icing sugar
  • 1/2 tsp salt
  • 240 gs all-purpose flour

Instructions
 

  • Whip the softened butter on high-speed in a bowl with an electric or stand mixer for 3-4 minutes until it's pale and creamy. Add vanilla with the butter if using.

  • With the mixer on low, add the icing sugar gradually and whisk until fully combined.
    90 gs icing sugar
  • Sift the flour and salt into the batter and mix on low speed until it fully combines and forms a thick dough. Make sure not to overmix at this step.
    1/2 tsp salt, 240 gs all-purpose flour
  • Transfer the dough to the baking sheet lined with parchment paper and form a 1/2-inch thick layer of dough (the biscuits will rise while baking). Let the dough chill for 30 mins. Meanwhile, preheat the oven to 150-degree celsius.
  • Once chilled, make cuts in the dough to form a rough shape for the biscuits, they will combine while baking, but you can easily cut through the same cuts again after baking. Bake the cookies for 45-60 mins, until the sides are golden brown.
  • Remove the biscuits from the oven, and while they are still hot and soft, run through the cuts again. Let the biscuits chill completely before enjoying them.

The cookie dough can be made in advance and kept in the freezer for up to 1 month.
