This quick and simple croissant bake is the perfect addition to your breakfast, brunch, dessert or Iftar table. The recipe uses simple ingredients, is super customizable, comes together in less than 20 minutes and tastes absolutely delicious.

If you’re looking for a quick, simple, and super delicious dish to add to your next gathering, this sweet croissant bake is exactly what you need.

Think French toast, but made with croissants and filled with your favorite flavors. PS: Don’t worry, you can use store-bought croissants.

The recipe has three elements, the French Toast batter, croissants, and the toppings. My favorite thing about it is that it’s super customizable. I have used the classic combination of chocolate and strawberries, but you can use anything you like. Don’t like fruits, skip them and add more chocolate. You can use a mix of fruits, a mix of chocolates. You can even use your favorite chocolate bar to fill the sliced croissants.

Basically, you can flavor them however you like, go wild with the ideas, and let me know your favorite ones in the comments.

There is not much else to say about this recipe, so let’s get into the details of each element,

French Toast Batter

The batter for this croissant bake is exactly the same as a regular French Toast.

You just add all the ingredients, which are eggs, sugar, milk, salt, and cinnamon in a bowl and whisk until fully combined, then use this batter to dip the croissants.

Croissants

I like to use mini croissants for making this croissant bake because they act as one individual serving. However, you can also use regular-sized croissants. To prepare the croissants, follow these steps.

  • Mini croissants: If using mini croissants, create a pocket in the center of each croissant by slicing them horizontally without cutting them all the way through. Just create a slit, don’t slice them in half.
  • Regular croissants: If using regular croissants, slice them in 2-3 pieces depending on how big they are.
  • Once the croissants have been prepped, dunk each piece in the French toast batter, let them soak for 30-40 seconds on both sides, then remove from the batter, release the excess batter, and place in the dish. Repeat the process until the entire dish is stuffed, then pour some of the remaining batter on top of the croissants.

Toppings

Now comes my favorite part, the toppings. Like I said, you can use whatever you like, or stick to chocolate and strawberries.

I like to place the toppings within the pockets that we created earlier in each croissant as it ensures that every serving gets a little bit of everything.

  • Place strawberry slices in between the croissant pockets, you can use fresh or frozen. Also place some more slices to fill up any gaps in the dish. If using regular size croissants, you can just spread the strawberry slices around the pan as needed. The strawberries will soften and become jammy while baking.
  • Bake the croissants for 20 minutes at 180 degrees celsius until golden.
  • Top the prepared croissant bake with some fresh croissant slices, a generous drizzle of melted chocolate, and some flaky sea salt and enjoy warm.

Told you it was simple! You can get this ready in under 30 minutes which makes it a perfect dish for gatherings.

PS: I always measure ingredients in grams, never in cups. Using a measuring scale is the only way to bake accurately. Cups are unreliable and can give different measurements, so I suggest you buy a measuring scale before you start baking! If you can’t get your hands on one, you can use the online tools for converting grams into cups; however, I do not guarantee their accuracy.

  • Hand whisk

Ingredients
  

  • 2 eggs
  • 200 ml full-fat milk
  • 50 grams sugar
  • 1 tsp vanilla essence
  • 1 tsp cinnamon powder
  • 1/4 th tsp salt
  • 10-12 mini croissants
  • 250 grams strawberries sliced
  • 100 grams milk chocolate melted
  • Sweetened whipped cream for topping (optional)
  • Flaky sea salt for topping

Instructions
 

  • Preheat the oven to 180 degrees Celsius.
  • Make the French toast batter: In a bowl, add the eggs, milk, sugar, vanilla, cinnamon, and salt, and whisk until fully combined.
    2 eggs, 200 ml full-fat milk, 50 grams sugar, 1 tsp vanilla essence, 1 tsp cinnamon powder, 1/4 th tsp salt
  • Prep the croissants: Make a pocket in each mini croissant by slicing it horizontally in the center without cutting it all the way through, just creating a slit in the center. If using regular size croissants, slice the, in 2-3 pieces depending on how big they are.
    10-12 mini croissants
  • Dunk each croissant into the batter for 30-40 seconds on each side until properly soaked, then remove them using a fork while getting rid of the excess batter. Place the croissant in your baking dish and repeat the process until the dish is full.
  • Top the croissants with some of the excess batter.
  • Place half of the sliced strawberries in the pan, placing some in the croissant pockets and spreading some in the empty spaces of the pan.
    250 grams strawberries
  • Bake the croissants for 20-25 minutes until golden brown.
  • Once it comes out of the oven, top with the remaining strawberry slices and drizzle a generous amount of melted milk chocolate on top. Pipe some whipped cream on top (if using), sprinkle a little flaky salt, and enjoy warm.

Notes

Storage:
This dessert is best enjoyed fresh, but can be stored in the fridge for 1 day. Before using, warm it up in the oven at 150 degrees for 5 minutes.
Note on the flavors:
You can customize the flavors however you like, use different fruits or no fruits at all, use any type of chocolate. The options are endless.
