Delicious, creamy, homemade no-churn chocolate ice cream with crispy chocolate bits sandwiched between Hide & Seek biscuits, these are the perfect summer treat that you can have in your freezer all season long!
For most Indian kids, including me, Hide & Seek was the first “chocolate chip cookie” we ever tried. While it may not be as fancy as American chocolate chip cookies, Hide & Seek is an absolute cult favorite biscuit til date, and rightfully so because it tastes SO good.
It’s a thin, square, crisp chocolate biscuit with little chocolate bits. It’s so good, I can eat a whole packet on my own even now.
I was recently eating Hide & Seek and I realized how they have the perfect texture for an ice cream sandwich. They are crisp, but not hard. They’re slightly chewy, but not soft, and they’re basically the perfect carrier for a delicious, creamy ice cream.
Of course, I had to pair it with a super luscious chocolate ice cream, cause the only thing that’s going to make Hide & Seek better is more chocolate. It’s super simple to make and the whole recipe comes together in less than 30 minutes.

No-Churn Chocolate Ice Cream
The simple no-churn chocolate ice cream is made with only four ingredients – whipping cream, condensed milk, cocoa powder, and melted dark chocolate. The melted chocolate freezes in the ice cream and creates these crispy bits that take it to a whole new level. I recommend using dark chocolate to balance out the sweetness of the ice cream and the biscuits, but you can also use milk chocolate.
Here are the steps for making the chocolate ice cream.
- In a bowl, add the liquid whipping cream and whip it until it reaches medium peaks. Do not over mix it at this step or it will split when you mix it again with the remaining ingredients.
- Add the condensed milk and sifted cocoa powder and whisk until everything is well-combined and you have a thick, fluffy mixture.
- Into this, drizzle a few spoonfuls of melted chocolate, and gently swirl it using a spatula, do not mix. You should have visible chocolate swirls in the ice cream mixture. Let it sit for 5-10 minutes and the chocolate will set. Mix it gently one more time to distribute the crispy chocolate bits in the ice cream evenly. Do not skip this step cause it makes the ice cream SO much more delicious.
Assembling the Hide & Seek Ice Cream Sandwiches
For assembling the ice cream sandwiches, you can use any square dish or a square pastry frame. If using a pan, make sure to line it with baking paper and leave an overhang on both sides so that you can easily lift the frozen ice cream block from the pan and cut it once set.
Here are the steps for assembling the ice cream sandwiches.
- Layer the Hide & Seek biscuits face-side down at the bottom of your chosen pan.
- Place the ice cream on top of the biscuit layer and smooth it out evenly using an offset spatula.
- Place another layer of the Hide & Seek biscuits on top of the ice cream layer, face-side up this time.
- Let the ice cream sandwiches chill in the freezer for up to 8 hours or overnight. Once set, cut them along the lines of the biscuits.
- Optional but recommended: Dip the ends of the sandwich in melted dark chocolate, sprinkle with sea salt and let them set before enjoying.
It really cannot get easier than this and honestly, it turns out so delicious, no one will ever know that it takes just 30 minutes to make.

PS: I always measure ingredients in grams, never in cups. Using a measuring scale is the only way to bake accurately. Cups are unreliable and can give different measurements, so I suggest you buy a measuring scale before you start baking! If you can’t get your hands on one, you can use the online tools for converting grams into cups; however, I do not guarantee their accuracy.
Hide & Seek Chocolate Ice Cream Sandwiches
Equipment
- Electric or hand whisk
- 8×8 inch square pan or pastry frame
- Silicone spatula
- Offset spatula
Ingredients
- 300 ml liquid whipping cream/heavy cream
- 240 ml condensed milk
- 15 grams cocoa powder sifted
- 50 grams dark chocolate melted
- 3 packets Hide & Seek biscuits
- 75 grams dark chocolate melted for dipping (optional)
- Sea salt optional
Instructions
- In a large bowl, whip the cream to medium peaks. Don’t over-mix at this step.300 ml liquid whipping cream/heavy cream
- Add the condensed milk and sifted cocoa powder and whip until fully combined and the cream is fully whipped and stable.240 ml condensed milk, 15 grams cocoa powder
- Drizzle the melted chocolate on top and swirl it in gently. Let it sit for 5 minutes until the chocolate sets then fold one more to distribute the crisp chocolate bits evenly.50 grams dark chocolate
- Line your baking pan or pastry square with baking paper, leaving an overhang on both sides if using a baking pan for easy removal. Layer the Hide & Seek biscuits at the bottom, face-side down. Top with the chocolate ice cream and spread it around evenly using an offset spatula, then place another layer of Hide & Seek Biscuits on top, face-side up. Let it chill in the freezer for at least 8 hours or overnight.3 packets Hide & Seek biscuits
- Remove the ice cream block from the pan or pastry frame and slice along the biscuits to make individual ice cream sandwiches
- Optional: Dip the ends of ice cream sandwiches into melted dark chocolate and sprinkle a little sea salt on top. Let it set and enjoy.75 grams dark chocolate, Sea salt

I think I probably ate half of this pan myself, it was just that good. So good that I’m about to make another batch again! The crisp and chewy biscuits paired with the creamy chocolate with the crispy bits is an absolute match made in heaven.
