Sure, you have tried french toast; I am sure you have tried plenty. But have you tried carrot cake french toast? Well, you’re about to cause once you read this recipe, you won’t be able to stop yourself from making it. Welcome to the rest of your life; that’s better than before because now you know that carrot cake french toast exists.
Okay, I am being overdramatic. But honestly, this french toast really made me feel some type of way, and I cannot wait to share it with you.
The base recipe is the same as always – eggs, milk, and sugar. But here’s how we bring in the carrot cake twist – by adding shredded carrots (no way?!).
We also make a few more changes to the base recipe to make it more carrot cake-like.
- We use brown sugar instead of white sugar. This adds depth of flavor and gives it that earthy flavor we all love in a carrot cake.
- We also add spices; any and every spice you like will do! I add a ton of cinnamon and nutmeg powder.
- Finally, we add shredded carrots, which (unsurprisingly) are the main ingredient to bring the carrot cake flavor.
To make the carrot cake french toast, mix all the ingredients in a bowl until they’re combined, dip your BRIOCHE bread in the mixture, let it soak, and then cook it in butter until golden brown.
I have emphasized BRIOCHE bread because it’s key to making this french toast amazing. You cannot make this with sad old sandwich bread and expect it to taste anything like carrot cake. We need brioche’s soft, cake-like texture to bring the carrot cake flavor to life.
I use Luisine’s brioche bread because I think it’s the best in the market in Gulf, but you can choose any brand you like.
Pro tip: Do not let your brioche bread soak in the mixture for more than 2 minutes. It will become too soft and almost impossible to move. Trust me; I have learned this with experience.

The final layer to making this french toast carrot cake-like is the simple cream cheese frosting because there is no carrot cake with cream cheese, right? The frosting is made with 4 simple ingredients – cream cheese, butter, icing sugar, and vanilla that’s hand-whipped until it’s nice and smooth.
Add a layer of the frosting in between the two brioche french toasts, top with more frosting, cinnamon powder, and nuts, and your carrot cake french toast is ready!

PS: I always measure ingredients in grams, never in cups. Using a measuring scale is the only way to bake accurately. Cups are unreliable and can give different measurements, so I suggest you buy a measuring scale before you start baking! Carrot Cake French Toast Recipe

Ingredients
Carrot Cake French Toast
- 2 eggs
- 100 ml full-fat milk
- 30 grams brown sugar
- 1/2 tsp cinnamon powder
- 1/2 tsp nutmeg powder can substitute with more cinnamon
- 30 grams shredded carrots
- 2 tbsp unsalted butter
- 2 slices brioche bread
Cream Cheese Frosting
- 60 grams cream cheese
- 28 grams unsalted butter softened
- 60 grams powdered sugar
- 1 tsp vanilla essence
Instructions
- Make the french toast batter: In a bowl, mix all the ingredients (except for the bread and butter) with a hand whisk until well combined – eggs, milk, brown sugar, cinnamon powder, nutmeg powder, and shredded carrots. Make sure to squeeze the water out of the grated carrots before you add them into the batter.2 eggs, 100 ml full-fat milk, 30 grams brown sugar, 1/2 tsp cinnamon powder, 1/2 tsp nutmeg powder, 30 grams shredded carrots
- Place a non-stick pan on low-medium heat, add one tablespoon of butter or ghee and let it melt. While the butter melts, Place one slice of the bread in the batter, let it soak for 30 seconds each side. Remove the bread from the batter and place it in the pan. Make sure not to over-soak the bread or it will become too soft and break.2 tbsp unsalted butter, 2 slices brioche bread
- Cook the bread until it's golden brown, then flip and cook the other side until golden brown. Repeat for the second slice.
- Make the cream cheese glaze: Whip the softened cream cheese and butter until smooth, then add the icing sugar and vanilla and mix until fully combined.60 grams cream cheese, 28 grams unsalted butter, 60 grams powdered sugar, 1 tsp vanilla essence
- To assemble, place one slice of the french toast on a plate, top it with a thick layer of cream cheese frosting, followed by the second slice. Top the slice with remaining cream cheese frosting, and a sprinkle of cinnamon and nuts (optional). Serve hot.
