Let’s be honest; ever since we’ve seen Harry, Ron, and Hermoine enjoy a glass of Butterbeer at The Three Broomsticks in Hogsmeade, we’ve wanted to try it. At least I have, SO BADLY. And unfortunately, I don’t live anywhere near London, so I have never gotten the opportunity to try a cup myself until now.
Last year, I got a Harry Potter cookbook from my Secret Santa, which had a seemingly authentic recipe for Butterbeer. Although I’ve had it for a year now, I never got the chance to make it. But recently, when I was doing my quarterly Harry Potter marathon, I could NOT stop thinking about Butterbeer. I remembered the cookbook recipe and knew I had to make it.
The best part? I already had some butterscotch sauce left from my Sticky Toffee Pudding, which felt like a sign. I have seen quite a few recipes for Butterbeer and often worried that it will be sickly sweet. I mean, the ingredient list does make it sound like it would be TOO sweet – vanilla ice cream, butterscotch sauce, and cream soda.
But boy, oh boy, was I wrong. It was sweet, no doubt, but God, was it DELICIOUS. I have really good self-control when it comes to eating because I always have something sweet at home, but I could not hold myself back from tasting this Butterbeer over and over again. Every time I would think to myself, “just one sip!” and I would be back within the next 5 minutes. It was just that good!
And it’s really as easy as it gets. This recipe’s only “cooking” component is the butterscotch sauce, which is super simple and comes together in 10 minutes. You can also store the butterscotch sauce in the fridge for up to 2 weeks, so you can whip up a glass of Butterbeer whenever you feel like it 😉.
How To Make The 3-Ingredient Butterscotch Sauce
When I say that this butterscotch sauce is one of the easiest things you will ever make, I mean it. It requires no technique, no hard work, and no time. All you need to do to make this butterscotch sauce is –
- Add all the ingredients (butter, brown sugar, heavy cream) into a saucepan and heat it on medium flame while mixing until the butter melts and mixes with the sugar and cream.
- Let the sauce simmer on low heat for 2-3 minutes until it thickens, then let it cool to thicken further.
- Take the sauce off the heat and blend to make it silky smooth.
That’s it – 3 simple ingredients and three steps are all it takes to make this butterscotch sauce. Once the sauce is ready, the Butterbeer will come together in 5 minutes!

PS: I always measure ingredients in grams, never in cups. Using a measuring scale is the only way to bake accurately. Cups are unreliable and can give different measurements, so I suggest you buy a measuring scale before you start baking! If you can’t get your hands on one, you can use the online tools for converting grams into cups; however, I do not guarantee their accuracy.
Butterbeer Recipe (Non-Alcoholic)
Ingredients
Butterscotch Sauce (makes up to 1 cup of sauce)
- 75 grams unsalted butter
- 132 grams packed brown sugar
- 95 ml liquid whipping cream/heavy cream
Butterbeer
- 80 grams butterscotch sauce (made from the recipe below) you can reduce or increase the quantity based on your sweetness preference
- 250 grams vanilla ice cream
- 330 ml cream soda (I used Canada Dry)
- Sweetened whipped cream & butterscotch sauce for topping
Instructions
- Make the butterscotch sauce: Add all the ingredients to a saucepan and cook on medium-high heat while stirring until the butter melts. Once the sauce starts boiling, bring the heat down and let it simmer for 2-3 minutes until the sauce thickens. Take off the heat and let it cool slightly before using.75 grams unsalted butter, 132 grams packed brown sugar, 95 ml liquid whipping cream/heavy cream
- Place all the ingredients for the butterbeer – ice cream, butterscotch sauce, and cream soda, in a blender and mix until everything is combined and well incorporated.80 grams butterscotch sauce (made from the recipe below), 250 grams vanilla ice cream, 330 ml cream soda (I used Canada Dry)
- Pour the butterbeer into a tall glass or cup and top with sweetened whipped cream and extra butterscotch sauce. Enjoy cold.Sweetened whipped cream & butterscotch sauce for topping
